This collection of recipes by Tom Aikens, the youngest chef in Britain to be awarded two Michelin stars, represent both his place as one of the UK's leading fine dining chefs and as the owner of a successful chain of brasseries.
In the case of the latter, dishes such as Truffle chips and Slow-braised shoulder of lamb with creamy mash are easy to prepare and bound to impress with their thoughtful depth of flavour. From the fine dining side of Tom Aikens' canon his Spiced foie gras with Sauternes, or the Coffee panna cotta with coffee granita recipe are more challenging, but the stunning results are worth the extra effort put in.
