Croquette recipes

The word croquette derives from the French word croquer, meaning 'to crunch' - which gives a good indication of what characteristics a good croquette should have. Croquettes are often cylindrical in shape (though they can also be flat and round) and feature a mushy centre enclosed in a crispy breadcrumb or sesame seed casing. They make a lovely snack or can be served with a dipping sauce to make an enticing starter or canapé.

Tuck in to this enticing collection of croquette recipes from the UK's best chefs, including Galton Blackiston's sesame and Cheddar croquettes, Simon Hulstone's meaty morcilla and pistachio croquette and a duo of croquettes from Marcello Tully.
