Casseroles are classic winter comfort foods that are slowly cooked over a long period of time. These recipes use cheap, tough cuts of meats such as beef cheek, pork belly or lamb shoulder, which break down during the cooking process. The slow cooking time allows the depth of flavour to develop and help tenderize the meat.
Have a go during the cold British weather at Alyn William's family friendly sausage and baked bean stew or Shaun Hill's classic beef stew with mash and leeks. Make sure when cooking a casserole that you use a tight fitting lid, otherwise most of the cooking liquor will be lost by evaporation which can cause the meat to burn.
