This collection of butternut squash recipes includes a delicious array of recipes both savoury and sweet featuring this wonderfully versatile ingredient. It is a remarkable star in soups, roasts, pasta, risotto, salads and even desserts, due to its sweet, rich flavour and its wonderful texture.

Butternut squash soup recipes are popular seasonal soups to make when the temperatures drop. Marcello Tully's spicy butternut squash soup will warm the cockles during the winter months, as will Dominic Chapman's brilliant soup recipe.

It is also a popular ingredient in vegetarian recipes, such as Andrew McKenzie's remarkable ravioli and this lovely spelt, barley and squash risotto from Josh Eggleton. The winter squash is also a fantastic companion to a large range of meats, fish and other seafood. Galton Blackiston pairs it with both fish and meat in two of his recipes--roast cod with winter ratatouille and roast Gressingham duck--with excellent results.

Dessert recipes can also benefit from the brilliance of butternut squash as a recipe ingredient. Robert Thompson's bavarois is a beautiful dessert which pairs it with an incomparable quince sorbet and purée. Butternut squash gets the frozen treatment in Simon Hulstone's magnificent recipe, where his rose and almond tansy pudding is served with butternut squash ice cream.
