The name clafoutis comes apparently fro the Occitan dialect word claufir which means to cover or fill, an apt name as the fruit is covered with a thick sweet flan-like batter made of eggs, flour, sugar and milk. This is a great use of summer fruit to create a moreish pudding, served with cream or lightly dusted with icing sugar.
