Seco de cordero – Peruvian lamb stew

Ingredients

Fresh Meat

  • 450g of leg of lamb, (boneless weight)

Salad & Fresh Herbs

  • 1 bunch of coriander

Spices & Dried Herbs

  • cumin seeds
  • oregano

Fruit & Vegetables

  • 2 garlic cloves, minced
  • 1 red onion, diced
  • 100g of carrots, chopped
  • 80g of peas

Cooking Sauces

  • 1 tsp aji amarillo chilli paste, (can be replaced with 1/2tsp habanero sauce)

Store Cupboard

  • 200ml of beef stock, or lamb stock
  • salt
  • pepper

Alcohol

  • 200ml of beer, pale and light
