Seared tuna with coriander and peanut salad and soy, lime and ginger dressing

Ingredients

Fish & Shellfish

  • 400g of fresh tuna, sashimi grade

Store Cupboard

  • 20g of sea salt
  • 1 tsp fish sauce, optional
  • 1 tsp honey
  • 160g of peanuts, roasted and salted

Beverages

  • 500ml of water

Oils & Vinegars

  • 1 tsp sesame oil
  • 40ml of sesame oil
  • 40ml of light olive oil

Cooking Sauces

  • 40ml of light soy sauce

Salad & Fresh Herbs

  • 1/2 tsp fresh ginger, grated

Fruit & Vegetables

  • lime juice, from 1 lime
  • 2 carrots, peeled and cut into matchstick-size pieces
  • 1 avocado, ripe, peeled and sliced
  • 2 spring onions, cut at an angle and washed in cold water
  • red chillies, thinly sliced on a bias, for garnish

Spices & Dried Herbs

  • 1 bunch of fresh coriander, chopped
