Pork cheeks with polenta

Ingredients

Fresh Meat

  • 800g of pork cheeks, trimmed of excess sinew and fat
  • 100g of bacon lardons, unsmoked

Fruit & Vegetables

  • 1 large onion, roughly diced
  • 1 large carrot, roughly diced
  • 1 celery stick, sliced
  • 3 garlic cloves, sliced
  • 100g of chestnut mushrooms, sliced
  • 1 lemon, zest only
  • 1/2 garlic clove, finely chopped

Spices & Dried Herbs

  • 1 tbsp of oregano, chopped

Store Cupboard

  • 500ml of chicken stock
  • 300g of polenta
  • 1l vegetable stock
  • salt
  • pepper

Cooking Sauces

  • 200ml of passata

Beverages

  • 200ml of red wine

Cheese

  • 150g of Parmesan, finely grated

Dairy

  • 25g of butter

Salad & Fresh Herbs

  • 70g of rocket, washed and rinsed
  • 1 tbsp of parsley, finely chopped

  • rapeseed oil, for frying
