Ingredients

Fresh Meat

  • 2.25kg leg of lamb, on the bone

Fruit & Vegetables

  • 4 sweet potatoes, cut into wedges
  • 3 garlic cloves
  • 1 lemon, juiced

Salad & Fresh Herbs

  • 50g of parsley, fresh, finely chopped

Spices & Dried Herbs

  • 1 tbsp of oregano, fresh
  • 1 tbsp of sweet smoked paprika

Store Cupboard

  • 1 tbsp of hot pepper sauce, optional
  • 250ml of virgin olive oil
  • salt
  • pepper

Oils & Vinegars

  • 100ml of sherry vinegar, or red wine vinegar
