Marinated halloumi with a mint, pomegranate and red onion relish and bulgur wheat salad

Ingredients

Cheese

  • 500g of halloumi, sliced into 16 pieces

Fruit & Vegetables

  • 1 lemon, juiced and zested
  • 2 garlic cloves, crushed
  • 3 red onions, large, sliced
  • 1 pomegranate, seeds popped out
  • 100g of cherry tomatoes, quartered
  • 1 cucumber, deseeded and diced
  • 1 bunch of spring onions, small, sliced
  • 1 lemon, juiced

Spices & Dried Herbs

  • 1 tbsp of za'atar

Oils & Vinegars

  • 1 tbsp of extra virgin olive oil
  • 1 tbsp of red wine vinegar

  • 50ml of pomegranate molasses

Salad & Fresh Herbs

  • 1 tbsp of mint leaves, roughly chopped
  • 2 tbsp of mint, roughly chopped, plus extra to garnish
  • 2 tbsp of parsley, roughly chopped
