Ingredients

2 haddock fillets, skin on, each weighing approx. 180g
Oils & Vinegars
1 dash of oil
200ml of malt pickling vinegar
200ml of walnut oil
malt vinegar, to taste

1 tbsp of sugar
1/2 tsp salt, plus extra to salt the cucumbers
100g of plain flour, plus a little extra for dusting
3 egg yolks
1 tsp Dijon mustard

50g of walnuts, toasted and chopped

6 baby cucumbers, cut into thick strips
lemon juice, to taste
2 large floury potatoes, peeled and chopped
150g of peas
Beverages
100ml of water
Salad & Fresh Herbs
3 dill stalks
chopped parsley, (optional)

1 tsp baking powder
Alcohol
150ml of brown ale
Dairy
50g of butter
30ml of whole milk
