Gammon and leek crumble

Ingredients

Fresh Meat

  • 400g of gammon, cooked and shredded

Fruit & Vegetables

  • 1 onion, finely chopped
  • 3 leeks, sliced
  • 1 garlic clove, finely chopped

Store Cupboard

  • 2 tbsp of plain flour
  • 1 tbsp of wholegrain mustard
  • 300g of plain flour
  • ground black pepper

Dairy

  • 100ml of double cream
  • butter, for frying
  • 150g of unsalted butter, cold, cut into cubes

Cooking Sauces

  • 300ml of ham stock, reserved from cooking the gammon, or chicken stock

Cheese

  • 100g of Parmesan, finely grated

Salad & Fresh Herbs

  • 2 sprigs of thyme, leaves picked
