Green tomato caponata bruschetta

Ingredients

Fruit & Vegetables

  • 2 large aubergines, diced
  • 1 shallot, halved and finely sliced
  • 1 celery stick, finely sliced
  • 2 garlic cloves, finely sliced
  • 5 green tomatoes, roughly chopped (one red tomato made it in the pot too)

Spices & Dried Herbs

  • 1 bunch of oregano, small, leaves picked

Store Cupboard

  • 2 tbsp of capers
  • 1 tsp tomato purée
  • salt
  • pepper

Oils & Vinegars

  • 2 tbsp of red wine vinegar
  • 100ml of olive oil
  • oil

Salad & Fresh Herbs

  • 1 tbsp of chopped parsley, to garnish

Bakery

  • stale sourdough, half a loaf, thinly sliced
