British game pie with orange and parsley gremolata

Ingredients

Store Cupboard

  • 500g of shortcrust pastry block
  • 500ml of beef stock
  • 1 1/2 tbsp of marmalade, smooth
  • 4 tbsp of plain flour
  • salt

Fresh Meat

  • 1.5kg mixed game, chopped (most good butchers will sell packs of ready-diced mixed game)
  • 100g of streaky bacon, chopped

Fruit & Vegetables

  • 1 stick of celery, roughly chopped
  • 2 large onions, peeled and chopped
  • 300g of mushrooms, mixed (such as chestnut, chanterelle, button)
  • 1 garlic clove, peeled and crushed
  • 1 orange, grated zest

Salad & Fresh Herbs

  • 2 bay leaves
  • 1 sprig of fresh thyme
  • 1 bunch of parsley, leaves picked and finely chopped

Beverages

  • 500ml of red wine

Dairy

  • 1 egg, beaten
  • butter, for greasing

Oils & Vinegars

  • vegetable oil, for frying

  • freshly ground black pepper
