British game pie with orange and parsley gremolata

Ingredients
Store Cupboard
500g of shortcrust pastry block
500ml of beef stock
1 1/2 tbsp of marmalade, smooth
4 tbsp of plain flour
salt
Fresh Meat
1.5kg mixed game, chopped (most good butchers will sell packs of ready-diced mixed game)
100g of streaky bacon, chopped
Fruit & Vegetables
1 stick of celery, roughly chopped
2 large onions, peeled and chopped
300g of mushrooms, mixed (such as chestnut, chanterelle, button)
1 garlic clove, peeled and crushed
1 orange, grated zest
Salad & Fresh Herbs
2 bay leaves
1 sprig of fresh thyme
1 bunch of parsley, leaves picked and finely chopped
Beverages
500ml of red wine
Dairy
1 egg, beaten
butter, for greasing
Oils & Vinegars
vegetable oil, for frying

freshly ground black pepper
