Apple, parsnip and potato soup

Ingredients

Dairy

  • 20g of butter
  • soft goat's cheese

Oils & Vinegars

  • 1 tbsp of oil

Fruit & Vegetables

  • 2 onions, or 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 potato, around 230g in weight
  • 1 parsnip, around 230g in weight
  • 1 apple, around 230g in weight (I used Braeburn, but I'm sure most types would work)

Store Cupboard

  • 400ml of vegetable stock
  • black pepper
  • walnuts, chopped
