Vegetarian kedgeree

Ingredients

Store Cupboard

  • 200g of basmati rice
  • 190g of lentils
  • 10 black peppercorns
  • salt
  • black pepper

Oils & Vinegars

  • 2 tbsp of vegetable oil

Spices & Dried Herbs

  • 1 tsp cumin seeds
  • 2 green chillies, chopped finely and de-seeded if preferred
  • 3/4 tsp turmeric powder

Fruit & Vegetables

  • 3 garlic cloves, finely chopped
  • 1 potato, diced into small cubes
  • 1 carrot, diced into small cubes
  • 100g of fine beans, cut into 3cm pieces
  • 1/2 head of broccoli, cut into medium sized florets

Frozen

  • 100g of frozen peas

Salad & Fresh Herbs

  • 1/2 bunch of coriander, washed and chopped

Dairy

  • 1 tbsp of ghee
