Turkey meatballs with pepper sauce

Ingredients

Fresh Meat

  • 500g of turkey mince

Fruit & Vegetables

  • 1 onion, peeled and finely chopped
  • 1 apple, peeled and grated
  • 1 1/2 red peppers, de-seeded and chopped
  • 2 shallots, peeled and finely sliced

Store Cupboard

  • 1 egg, lightly beaten
  • 3 tbsp of breadcrumbs
  • 3 tbsp of plain flour
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 tsp tomato purée
  • 425ml of vegetable stock
  • 1 pinch of salt
  • 1 pinch of pepper

Salad & Fresh Herbs

  • 1 tbsp of sage, chopped, or 1/2 tbsp dried sage
  • 1 tbsp of thyme, leaves only

Oils & Vinegars

  • 2 tbsp of vegetable oil
  • 1 tbsp of vegetable oil
