Salmon tiradito

Ingredients

Fish & Shellfish

  • 400g of salmon fillet, cut tiradito style
  • 100g of sea bream, or other white fish, cut into pieces

Cereals, Grains & Pasta

  • 5g of chia seeds

Fruit & Vegetables

  • 1 1/2 white onions, peeled and cut into chunks
  • 2 celery sticks
  • 3 garlic cloves, crushed
  • 125ml of lime juice, passed through a chinois
  • 150g of green rocoto pepper, to make the paste
  • 75ml of lime juice, fresh

Spices & Dried Herbs

  • 20g of ginger, peeled and chopped
  • 1 chilli, preferably limo

Beverages

  • 140ml of iced water

  • 1/2 bunch of coriander
  • micro cress, 1 assorted punnet
