Salmon, mangetout and baby potato salad with a curried corn and salmon roe dressing

Ingredients

  • 4 salmon fillets
  • 50g of salmon roe

Oils & Vinegars

  • extra virgin olive oil

Salad & Fresh Herbs

  • 1 handful of chives, finely chopped

Fruit & Vegetables

  • 1kg waxy potatoes
  • 75g of mangetout
  • 1 fresh corn on the cob
  • 1 garlic clove, crushed
  • 1 tbsp of lime juice

Dairy

  • 200ml of buttermilk

Store Cupboard

  • 4 tbsp of mayonnaise
  • salt

  • 1 tsp curry powder
  • freshly ground black pepper
