1/2 side of salmon, weighing approx. 600g
Fruit & Vegetables
1/2 lemon, sliced
1 carrot, peeled and halved
1 onion, peeled and halved
3 garlic cloves, bashed with their skins left on
1 small red onion, very finely diced
1/2 green pepper, very finely diced
Oils & Vinegars
olive oil
70ml of extra virgin olive oil
50g of sherry vinegar

sea salt
400g of butter beans, dried, soaked overnight in cold water
salt
Spices & Dried Herbs
freshly ground black pepper
Salad & Fresh Herbs
4 sprigs of fresh thyme
1 handful of flat-leaf parsley, chopped
