Ingredients
Fresh Meat
8 lamb chops
100g of smoked bacon lardons
Fruit & Vegetables
150g of shallots, peeled and left whole
150g of chantenay carrots, halved lengthways
4 garlic cloves, sliced
150g of button mushrooms, smaller ones left whole or halved if larger
Beverages
2 tbsp of cognac
750ml of red wine
Store Cupboard
2 tbsp of cornflour, mixed with a splash of water to make a paste
salt
Spices & Dried Herbs
1 bouquet garni, containing 2 sprigs of rosemary, 2 sprigs of thyme and a bay leaf
freshly ground black pepper
Salad & Fresh Herbs
1 handful of fresh parsley, chopped
