Grilled mackerel with beetroot and new potato salad

Ingredients

Fish & Shellfish

  • 6 mackerel fillets, or more if desired

Oils & Vinegars

  • olive oil
  • 2 tbsp of sherry vinegar
  • 60ml of olive oil

Store Cupboard

  • salt
  • pepper
  • 2 eggs, hard-boiled, chopped
  • 2 tsp Dijon mustard

Fruit & Vegetables

  • 350g of new potatoes
  • 2 large beetroots
  • 1 celery stick, diced
  • 1/2 red onion, minced

Salad & Fresh Herbs

  • 2 tbsp of chives, minced

  • 6ml of Greek yoghurt
