  • 200g of green tea noodles

  • 2 tsp sesame oil
  • 2 tbsp of rice wine vinegar, or white wine vinegar
  • 50ml of rice wine vinegar, or white wine vinegar

  • 1 avocado, peeled and sliced
  • 3 spring onions, thinly sliced (45g)
  • 80g of radishes, thinly sliced
  • 50ml of lemon juice

Store Cupboard

  • 1 tbsp of sesame seeds, toasted (a mix of black and white looks great)
  • 1 tbsp of caster sugar
  • salt

Beverages

  • 2 tsp sake, or Shaoxing wine
  • 2 tbsp of mirin

Cooking Sauces

  • 75ml of light soy sauce

Spices & Dried Herbs

  • 15g of ginger, peeled and finely grated
