Goan prawn curry

Ingredients

Fish & Shellfish

  • 250g of prawns, raw peeled

Spices & Dried Herbs

  • 1/4 tsp turmeric powder
  • ginger, 1 inch
  • 8 dried red chillies, preferably bright red or Kashmiri
  • 1 tsp cumin seeds

Speciality Ingredients

  • 3 tbsp of coconut oil

Fruit & Vegetables

  • 2 shallots, sliced
  • 1 mango, small, peeled and diced
  • 2 kokums, or goraka (if unavailable, replace with 1 tsp of tamarind concentrate)
  • 6 garlic cloves

Beverages

  • 200ml of water
  • water, as required

Store Cupboard

  • 50ml of coconut milk, (optional)
  • salt
  • 250g of coconut, grated (fresh or frozen)

Salad & Fresh Herbs

  • 2 tsp coriander seeds
  • micro cress, preferably red vein sorrel
