3 ancho chillies, or other mild Mexican smoky chilli
1 1/2 tbsp of cumin seeds
1 cinnamon stick

1 tbsp of Worcestershire sauce
250ml of beef stock, good quality
800g of tinned plum tomatoes
50g of 70% dark chocolate

250g of pancetta, or smoked bacon lardons

1 bulb of garlic, cloves peeled and crushed
1kg tinned black beans, drained weight
