Beef short rib and onion cottage pie

Ingredients

  • 4kg beef short rib
  • 4 centre-cut beef marrow bones, 10cm long, cleaned of any sinew

Fruit & Vegetables

  • 6 carrots, peeled
  • 1 leek, washed
  • 6 onions, thinly sliced
  • 3 King Edward potatoes, large

Store Cupboard

  • 1 head of garlic
  • 4l chicken stock
  • 1 bunch of rosemary, to serve

  • 1 bunch of fresh thyme

Spices & Dried Herbs

  • 4 star anise
  • 10g of peppercorns

  • 100ml of port
  • 300ml of red wine
