Ingredients

Fresh Meat

  • 8 hare legs

Beverages

  • 2l red wine

Fruit & Vegetables

  • 4 juniper berries, lightly crushed
  • 1 onion, finely chopped
  • 100g of button mushrooms, quartered
  • 2 carrots, trimmed and roughly chopped

Salad & Fresh Herbs

  • 1 bay leaf
  • sprig of thyme

Store Cupboard

  • salt
  • 1 tbsp of plain flour, plus extra for dusting
  • 1 tbsp of tomato purée
  • 3l beef stock

Spices & Dried Herbs

  • freshly ground black pepper

Oils & Vinegars

  • vegetable oil, for frying

Dairy

  • 1 knob of butter

  • 300ml of hare blood, (ask your butcher to reserve this for you when he butchers the hare)
