Ingredients
Fresh Meat
1.2kg braising beef, chopped into 200g slices
Store Cupboard
sea salt to season
10g of sugar
1.1l beef stock
1 tsp cornflour
1 dash of gravy browning
25g of plain flour
25g of green peppercorns
sea salt to season
1 sheet of puff pastry, cut into 6 equal circles the same size as your ramekins
Oils & Vinegars
1 dash of vegetable oil
75ml of red wine vinegar
1 dash of vegetable oil
Fruit & Vegetables
6 carrots, peeled
3 small onions, cut into halves
1 garlic clove
24 button mushrooms, sliced thinly
1 shallot, finely diced
Salad & Fresh Herbs
1 bay leaf
1 sprig of fresh thyme
1 handful of chives, chopped
2 handfuls of parsley
Beverages
125ml of bottle of red wine
Alcohol
200ml of bitter beer
Dairy
25g of butter
600ml of milk, hot
1 egg
