One of the latest restaurants to contribute to Kent’s exciting food scene, Verdigris isn’t just a standout modern British restaurant – it’s also home to one of the most exciting cocktail bars outside of London.
In the pretty little market town of Tonbridge, just north of Royal Tunbridge Wells, Kentish chef Scott Goss has renovated an old Victorian pub overlooking the River Medway to become Verdigris – one of the county’s most exciting new restaurants. Opened in late 2018, the forty-cover dining room has an art deco vibe, with original artworks on the walls and plenty of natural light flooding through the windows.
Scott’s food has always championed the best British (and usually Kentish) ingredients first and foremost, and the menu at Verdigris continues that trend. Dishes are kept simple in terms of appearance, but there’s years of experience behind each technique, resulting in confident, bold dishes that let the ingredients speak for themselves. Flavours are always familiar without any unnecessary flourishes, with diners able to choose from à la carte, tasting, set lunch or Sunday lunch menus depending on the time and day.
In addition to the dining room, Verdigris is also home to one of the most exciting cocktail bars in the country. Bartender James Harrison and his team spend time sourcing rare bottles of spirits, creating tinctures and infusing syrups so they can create unique concoctions that have the same complexity and depth of flavour as Scott’s food. There’s also a huge list of gins, craft beers on tap and a curated wine list, ensuring there’s a tipple suited to everyone.
