Ingredients

  • 4 tbsp of olive oil
  • 345ml of apple cider vinegar
  • 100ml of olive oil

  • Maldon salt to taste
  • 1 1/2 tsp sea salt
  • 200g of sugar
  • 4 hard-boiled eggs, grated
  • sea salt to season
  • 50g of capers

Fruit & Vegetables

  • 500g of green tomatoes, halved
  • 1 1/2 tsp chilli flakes
  • 1 lemon, sliced
  • lemon juice to taste

Spices & Dried Herbs

  • 2 tbsp of mustard seeds
  • 1 clove

Speciality Ingredients

  • 100g of pickled green tomato
  • 50g of cornichons, chopped

Salad & Fresh Herbs

  • 50g of tarragon leaves
  • 50g of chervil leaves
  • 50g of fronds of fresh dill
  • 50g of flat-leaf parsley leaves
