Ingredients
White bean, feta and mint salad
350g of cannellini beans, cooked
50g of feta, crumbled
10 mint leaves, finely chopped
4 spring onions, sliced
1 lemon, juiced
1 tbsp of olive oil
2 garlic cloves, crushed
1 pinch of sea salt
1 pinch of black pepper
Method

Place the cooked beans in a large bowl with half of the crumbled feta, half the mint leaves and half the spring onions

Add the lemon juice, olive oil, crushed garlic and seasonings and mix everything together until fully combined

Transfer to a serving dish and sprinkle over the remaining feta, mint and spring onions to serve
