Root vegetable ramen with potato noodles

Ingredients

  • 1 egg

  • rapeseed oil

Fruit & Vegetables

  • 1 shallot, finely chopped
  • 1 garlic clove, finely sliced
  • 1 carrot, finely diced
  • 1 stick of celery, finely diced
  • 100g of celeriac, finely diced
  • 1 small potato, cut into noodles with a spiralizer
  • 1/2 red chilli, deseeded and sliced
  • 1 savoy cabbage leaf, finely sliced
  • 1 lime, sliced into rounds

Store Cupboard

  • 1 vegetable stock cube
  • sea salt
  • ground white pepper

Beverages

  • 500ml of boiling water

Salad & Fresh Herbs

  • 1/2 bunch of coriander, roughly chopped (keep the stalks separate)

Spices & Dried Herbs

  • 1 knob of ginger, finely sliced

Cooking Sauces

  • tamari, to serve
