Tomato water with seabass, elderflower and oregano

Ingredients

Fruit & Vegetables

  • 1kg large vine tomatoes
  • 1 cucumber
  • 1/4 cucumber

Salad & Fresh Herbs

  • 6 large spring onions
  • 1 handful of basil
  • 50g of elderflower, stalks removed
  • 1 handful of oregano leaves

Store Cupboard

  • 2 pinches of sea salt flakes
  • 50g of caster sugar

Oils & Vinegars

  • 500ml of white wine vinegar
  • extra virgin olive oil

Fish & Shellfish

  • 1 sea bass fillet, pin-boned and skinned
