  • 125g of butter, cubed

  • 1 pinch of salt
  • flaky sea salt

  • 75ml of water, chilled

Fruit & Vegetables

  • 1/2 courgette
  • 3 tomatoes, a mixture of large and small and ideally different colours
  • 1 lemon, zested

Spices & Dried Herbs

  • 4 sprigs of oregano
  • freshly ground black pepper

Oils & Vinegars

  • 1 tsp sherry vinegar
  • extra virgin olive oil

Cheese

  • 80g of feta, thinly sliced

Salad & Fresh Herbs

  • 1 handful of rocket
