Tofu katsu curry

Ingredients

Oils & Vinegars

  • 30ml of vegetable oil
  • 1 tsp rice vinegar
  • vegetable oil

Fruit & Vegetables

  • 1 white onion, finely sliced
  • 2 garlic cloves, minced
  • shallots, or spring onions, sliced
  • carrots, julienned

Salad & Fresh Herbs

  • 1 tsp fresh ginger, grated

Spices & Dried Herbs

  • 1 tbsp of mild curry powder
  • 2 tsp garam masala

Store Cupboard

  • 2 tbsp of plain flour
  • 1 tbsp of honey
  • 1 large egg
  • 125g of plain flour
  • 100g of Panko breadcrumbs (1)
  • salt
  • pepper
  • 400g of Japanese short grain rice

Speciality Ingredients

  • 400ml of dashi, made from kombu
  • 300g of firm tofu

Cooking Sauces

  • 2 1/2 tbsp of tamari
