  • 4 tbsp of sake
  • 4 tbsp of mirin
  • 100ml of water
  • 350ml of water

Cooking Sauces

  • 4 tbsp of light soy sauce

  • 4 tbsp of dark soy sauce
  • 4 tbsp of light brown sugar
  • 2 tbsp of caster sugar
  • 1 tsp salt
  • 2 tbsp of black sesame seeds

Salad & Fresh Herbs

  • 15g of fresh ginger, cut into thin strips
  • 1 bunch of bunch of coriander, leaves picked

Fruit & Vegetables

  • 2 garlic cloves
  • 1/2 cucumber
  • 1 mild red chilli, finely diced
  • 1 bunch of spring onions, green tops finely sliced

Oils & Vinegars

  • 100ml of rice wine vinegar
