Three cheese tapioca pancakes recipe

makes 2

  • 1 large egg
  • 30g of tapioca starch
  • 30g of ricotta
  • 5g of Parmesan
  • 15g of cheddar
  • salt, to taste
  • black pepper, to taste


In a blender add all ingredients and mix well for about 3 minutes. Keep to one side. Place a knob of butter in a non-stick crêpe pan over medium heat
Add 2 ladles of pancake batter to the pan and cook for 2 minutes, until light brown, turn the other side and cook for another minute
Serve immediately with a dusting of Parmesan cheese on top
