Tandoor-grilled salmon with lime-leaf and spinach marinade

Ingredients

Fish & Shellfish

  • 1000g of salmon fillet

  • 1 tbsp of gram flour
  • 1 tbsp of ginger-garlic paste
  • sea salt, finely ground

Fruit & Vegetables

  • 1/2 lemon
  • 1 handful of spinach
  • 3 tbsp of lemon juice
  • 1/2 lemon
  • 2 red onions, finely sliced
  • 2 red chillies, optional

Salad & Fresh Herbs

  • 1 bunch of coriander, leaves only
  • 1/2 bunch of mint, leaves only

Spices & Dried Herbs

  • 2 green chillies, deseeded
  • 2 lime leaves
  • 1/2 tsp ground turmeric
  • 1 tbsp of ground cumin
  • 1 tbsp of ground coriander
  • 1/2 tsp chaat masala

Oils & Vinegars

  • 25ml of vegetable oil
