Tacos de suadero – slow-cooked beef brisket tacos

Ingredients

Fresh Meat

  • 2kg beef brisket, or another roasting cut such as feather blade
  • 2kg beef fat, or duck fat

Fruit & Vegetables

  • 1 garlic bulb, halved
  • 1/2 onion, diced
  • 1 lime, cut into wedges
  • 3 garlic cloves
  • 2 tomatoes
  • 1/2 onion

Store Cupboard

  • 1 handful of sea salt
  • 1 pinch of salt

Bakery

  • 30 corn tortillas

Salad & Fresh Herbs

  • 1/2 bunch of coriander, finely chopped

Delicatessen

  • 3 guajillo chilli peppers

Beverages

  • 250ml of hot water

Oils & Vinegars

  • 50ml of cider vinegar

Spices & Dried Herbs

  • 1 pinch of cumin powder
