  • fennel fronds

  • 40g of sugar
  • 150g of white chocolate
  • 1 egg
  • 3 egg yolks
  • 60g of sugar
  • 1 vanilla pod, seeds scraped
  • cobnuts, halved

Salad & Fresh Herbs

  • 3 sprigs of mint
  • lemon sorrel

  • 75g of water
  • 85g of Champagne
