Steamed wontons in chilli broth

Ingredients

Fruit & Vegetables

  • 1 garlic clove
  • 1 spring onion
  • 1 head of Chinese leaf, 2 leaves only

Spices & Dried Herbs

  • 1 handful of fresh coriander, plus extra to garnish
  • 2 tsp chilli sauce, preferably chilli oil

Salad & Fresh Herbs

  • 1 bunch of fresh chives, preferably Chinese chives

Delicatessen

  • 3 dried shiitake mushrooms, soaked and drained

Fish & Shellfish

  • 150g of tiger prawns, peeled and deveined if using

Cooking Sauces

  • 1 tbsp of light soy sauce

Store Cupboard

  • 1/2 tsp granulated sugar
  • 200ml of chicken stock
  • 1/2 tbsp of oyster sauce

Oils & Vinegars

  • 2 tsp sesame oil
