Steamed aubergine in a chilli and sesame dressing

  • 2 aubergines, sliced into small batons
  • 4 garlic cloves, very finely chopped
  • 1 spring onion, finely chopped

Cooking Sauces

  • 66ml of light soy sauce

Speciality Ingredients

  • 55ml of Chinkiang black vinegar
  • 1 tbsp of Chinese toasted sesame paste, or peanut butter

Oils & Vinegars

  • 70ml of chilli oil, with some crispy sediment
  • 2 tbsp of vegetable oil
