Spinach and porcini risotto

Ingredients

Store Cupboard

  • 400g of carnaroli risotto rice
  • 1l chicken stock, or vegetable stock
  • salt
  • pepper

Fruit & Vegetables

  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 400g of spinach, washed and de-stemmed

Salad & Fresh Herbs

  • 1/2 head of celery
  • 4 sprigs of fresh thyme

Delicatessen

  • 20g of dried porcini mushrooms

Beverages

  • 300ml of white wine

Dairy

  • 200g of unsalted butter

Cheese

  • 75g of Parmesan, grated
  • 6 tsp mascarpone, (optional)
