Spiced chocolate, black pepper and coffee mousse


Store Cupboard

  • 150g of dark chocolate, 70% cocoa solids, broken into small chunks
  • 1 tsp instant coffee granules, heaped (use the best quality you can find)
  • 50g of golden caster sugar


  • 30g of unsalted butter
  • 3 eggs, separated
  • 125ml of double cream

Spices & Dried Herbs

  • 1 tsp ground cinnamon, scant
  • 2 green cardamom pods, large, broken open and seeds finely ground in a pestle and mortar (discard the pods)
  • freshly ground black pepper


  • 2 tbsp of boiling water

Speciality Ingredients

  • 1 tsp vanilla bean paste, heaped
