Sous vide lamb ribs with spicy green miso dipping sauce

Ingredients

Fresh Meat

  • 16 lamb ribs, cut from 2 lamb breasts

Fruit & Vegetables

  • 1 lime, juiced and zested
  • 2 garlic cloves, roughly chopped
  • 1 lime, juiced and zested

  • 1 jalapeƱo, roughly chopped (the seeds can be taken out if you prefer less heat)
  • 1 spring onion, finely sliced

Spices & Dried Herbs

  • 2 tsp ground cumin
  • 2 tsp smoked paprika

Oils & Vinegars

  • 100ml of olive oil
  • 50ml of sesame oil
