Sous vide beef and prune tagine

Ingredients

  • 1kg beef shin, cut into cubes

  • 2 onions, finely chopped
  • 250g of prunes, stoned

Spices & Dried Herbs

  • 1 pinch of saffron, ground to a powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon

Store Cupboard

  • 1 tsp garlic powder
  • 1 tbsp of runny honey
  • salt
  • pepper
  • 300g of couscous
  • 75g of flaked almonds, toasted
  • 1 tbsp of toasted sesame seeds

Dairy

  • 50g of unsalted butter, chilled

Frozen

  • 5 ice cubes

Oils & Vinegars

  • 1 tbsp of olive oil
  • 1 tbsp of extra virgin olive oil

Salad & Fresh Herbs

  • 1 handful of coriander, chopped
