Golden pan-seared sole with ginger and spring onion

Ingredients

Fish & Shellfish

  • 1 sole, gutted and cleaned (you could also use pomfret or bream)

Oils & Vinegars

  • 4 tbsp of vegetable oil
  • 1 tsp sesame oil

Fruit & Vegetables

  • 2 spring onions, finely chopped
  • 2 garlic cloves, finely minced

Spices & Dried Herbs

  • 10g of root ginger, finely minced

Speciality Ingredients

  • 3 tbsp of Shaoxing wine

Store Cupboard

  • 2 tbsp of soy sauce
  • 1 tbsp of sugar

Salad & Fresh Herbs

  • 1 handful of coriander, to garnish
