Smoky roasted beef short ribs with blackberry barbecue sauce and fennel coleslaw

Ingredients

Fresh Meat

  • 1kg beef short rib, cut into short lengths by the butcher

Fruit & Vegetables

  • 225g of blackberries
  • 1/4 white cabbage, very finely sliced
  • lemons for juice to taste

Oils & Vinegars

  • 100g of cider vinegar
  • 1 tbsp of white wine vinegar

Store Cupboard

  • 100g of brown sugar
  • 200g of tomato ketchup
  • 1 dash of Worcestershire sauce
  • 1/2 tsp mustard powder
  • salt to taste
  • 1 tsp Dijon mustard
  • salt to taste

Spices & Dried Herbs

  • freshly ground black pepper to taste
  • 1 bulb of fennel, cored and very finely sliced
  • chopped dill to taste
