Short rib chilli con carne with beer pickled onions

Ingredients

Beverages

  • 100ml of strong coffee

Spices & Dried Herbs

  • 2 dried morita chillies
  • 1 cascabel chilli
  • 1 tbsp of cumin seeds
  • 1 tbsp of dried oregano
  • 1 cinnamon stick
  • freshly ground black pepper to season
  • 2 allspice berries

Salad & Fresh Herbs

  • 1 tbsp of coriander seeds
  • 1 bay leaf

Oils & Vinegars

  • 2 dashes of vegetable oil
  • 1 tbsp of vinegar
  • 125ml of white wine vinegar

Fresh Meat

  • 1kg beef short rib, about 4 ribs

Fruit & Vegetables

  • 1 onion, diced
  • 6 garlic cloves
  • 4 lime wedges
  • 1 onion, sliced

Store Cupboard

  • 350ml of beef stock, plus 250ml for topping up if needed
  • 400g of tinned chopped tomatoes
  • salt to season
  • 1 dash of Worcestershire sauce
  • 30g of 70% dark chocolate
  • 2 tbsp of pickled jalapeƱos, chopped
  • 50g of caster sugar
  • 1 pinch of sea salt

  • 1 tin of white kidney beans, drained

  • feta to taste

Alcohol

  • 250ml of bitter beer
