Ingredients

  • 1 venison loin, preferably fallow deer
  • 1.5kg venison bones, chopped

  • butter
  • 200g of salted butter, plus a little extra for reheating
  • 100g of butter

  • 1.2l chicken stock, plus extra to cover
  • 70g of 75% dark chocolate
  • 3 black peppercorns

  • 2 shallots, finely sliced

Salad & Fresh Herbs

  • 1 sprig of thyme
